O rigins
Almost all the plain around Assisi, especially the part at the feet of S. Francis Church, belonged to Saint Peter Abbey in the past.

This majestic church is located in lowest part of the city, just a few steps from the ancient walls of the Assisi. It’s a very suggestive church: little windows, typical of the romanic style, give a magic atmosphere to this church. The main protagonists are the big columns dividing the space in 3 naves and a big, raised, central altar made of stone.

Since the beginning this abbey belongs to the Benedectine Monks. They were hard workers and took care of the big fields producing wheat, vegetables and fruits, grape included.

That’s why all the area of SAIO Assisi vineyards was called “San Pietro Campagna” – “Saint Peter’s Coutryside” in the past.


T he Wine tasting Room

Let’s disconver the story of the tasting room.

The building date back to the early 20th century.

It belonged to the Benedictine monks, together with almost all the fields here around. It was used to store the crop and and the wine in the barrels.

Its position along one of the main street leading to Assisi, madae this place particularly adapt for this aim.

On the walls of the building you can still find traces of the past.

Have you seen the iron rings on the walls? They were used to fix the reins of horses.

With the passing of the decades this building sometimes was empty, it bacome a store specialized in antiques and finally SAIO Assisi project.

W hat SAIO means?
SAIO is the name we chose for this new project.

We were looking for a name that could immediately remember the history and tradition of Assisi, the same history and tradition that made Assisi important for the whole Christianity, known all over the world.

SAIO in Italian is the name of the tunic Saint Francis wore to maintain a life made of poverty, in contact with God and in symbiosis with nature. SAIO became the icon of the new order.

That’s why we chose the name SAIO: a tribute to honor the history of a Assisi.

What makes SAIO Assisi vineyards special?

The typical pink and white-stones of the Subasio Montain make the Soil pebbly and permeable, perfect for high quality wines, fine, elegant, high in alcohol, with intense scented bouquets.
The fresh Tramontana wind always flows at night, it assures a wide temperature excursion and helps the vines to convey aromas to their barries.
The Sun radiates the clusters constantly in the right way thanks to the right orientation of the lines, trimming long shoots and eliminating excess leaves by hand.
During harvest the grape is in the cellar for a soft press by max. 3 hours form the picking. The must is fermented in stainless steel containers at controlled temperature to exalt the natural aromas in the process from must to wine. Ageings in oak barrels and then in the bottle are contantly checked to enhance the peculiarities of a wine that always reflects the characteristics of its own vintage
